I did as promised and increased the level on my elliptical workout. It was much needed and I had a killer workout. There's nothing like a great workout to boost your spirits and put you in a better mood. I'm excited to take a spinning class tomorrow morning. My legs need the change and challenge. I could also use a break! My husband has been out of town this week and comes home today. It makes for a long, tiring week. When he comes home I like to fix him one of his favorite home cooked meals. I love butternut squash and my husband does too, but he didn't always. I turned to Betty Crocker to help me with what has now become our favorite slow cooker meal. Slow Cooker Mediterranean Chicken is a regular meal in our house. We add hot salsa because we like it spicy and I put in an extra can of drained diced tomatoes. Here is the link to the recipe. Enjoy!
