Foodie Friday-squash the roast and roast the squash
Its cold, the baby is not feeling well, and now neither am I. Nothing soothes your soul like comfort food. My comfort food in the winter time is roasted squash. I love winter squash. Spaghetti squash, acorn squash and most of all butternut squash. Tonight for dinner I'll cut my butternut squash in half, scoop out the seeds, sprinkle it with cinnamon, put in cut side down in a pan, fill the pan with 1/2 cup of water and roast it at 400 for 90min. You can top it with quinoa, pecans, shredded chicken, or just eat it plain. Did i mention that I love squash?!
